You can store beets in the cellar, in the refrigerator, in plastic bags and in boxes with sand. If you follow all the rules, then the root crops will remain fresh and juicy and lie until spring. Let us consider in more detail the optimal temperature regimes and rules for storing beets.

Beets will retain their properties well and for a long time at a temperature of 33-39 degrees Fahrenheit and a humidity of 80-90%.

If the place of storage is warmer, then there is a high probability of rapid drying of the root crops, loss of elasticity and a decrease in the shelf life. When the temperature drops to weak negative values, root crops can freeze slightly and begin to quickly be affected by various diseases.

The room should be dark and well ventilated. It is desirable to exclude drafts.

At normal room temperatures, beets can be stored for about a week.

If the required temperatures are observed, beets can be stored for about 8 months.

Very long storage of beets

A popular and easy way to store beets is in sandboxes. Beets can be stored in sand for up to a year. Sand retains moisture, prevents it from reaching the beets, prevents the evaporation of beneficial moisture from the root crops themselves, and perfectly fights mold.

Beets can be stored in wooden or plastic crates without holes. The sand should be slightly damp, but not wet.

Plastic bags can be used instead of boxes. Instead of sand, you can use any hygroscopic material: mustard powder, sawdust, perlite, something like that.

VegVegetables are placed in the bag only dry and clean. The container must not be closed: the bag must be open to provide the necessary ventilation. You can’t leave it warm either. Beets are stored in this form in a room where the air temperature does not exceed 32-33 degrees Fahrenheit. The packages prepared in this way are stored, for example, in the garage.

How to store beetroot in the fridge?

You can store beets in the refrigerator for 1-1.5 months. You can store it in several ways:

  • Vegetables carefully peeled from the ground are put in plastic bags with holes made so that moisture does not accumulate. In this form, you can store beets without noticeable deterioration in the vegetable box for about 1 month.
  • When stored under vacuum conditions, the beets are washed, dried and placed in sealed containers or bags. Beets can lie in the refrigerator for 6-7 weeks.
  • For quick consumption (up to 2-3 weeks), beets can be stored normally in the vegetable drawer.
  • If you want to keep root vegetables longer, it is best to freeze them.

How to freeze beets?

If you decide to store the beets by freezing, then in this case the vegetables are washed, the skin is removed from them. Then they are cut as it will be convenient to use them. For example, tinder on a grater, cut into small bars or cubes. Lay out the cuts in small containers or trays, seal tightly and put them in the freezer.

How to store boiled beetroot?

If it so happened that you boiled a lot of vegetables and did not use them, take care of storing boiled beets. Carefully place the dry product in a bowl, close the lid and send to the refrigerator. Under such conditions, the beets can be stored for up to 3 days without loss of nutritional qualities.

Important! Before storing in the fridge, you should not clean and cut the root crop – the shelf life will automatically be reduced to a day.

If you do not put boiled beets in the refrigerator, then the shelf life of the product is drastically reduced. For more than 12 hours at room temperature, the boiled vegetable will not lie – it will deteriorate.

Vacuum packaging – bags or containers will help to significantly extend the shelf life of finished beets.

Important! In vacuum packaging, the quality of the boiled product is preserved for up to 10 days.

A clean boiled root crop in a vacuum can be stored both whole and cut into pieces. To preserve the whole vegetable, you need to wait until it cools down well after cooking, and put it tightly in a vacuum bag. In a sealed package without air access, it is placed in the refrigerator. If you use not a bag, but a vacuum container, the shelf life does not change. The same 10 days in a refrigerator.
