Step by step method

  • Step 1

Break the eggs into a bowl, add salt and sugar and beat well with a mixer until light and fluffy.

  • Step 2

Pour the oil into the same bowl and mix well. Next, add vanilla extract, lemon zest and juice and mix again. Separately mix flour and baking powder.

  • Step 3

Sift the dry mixture into a bowl and knead the dough, it should turn out to be very soft and not sticky to your hands. If the dough is still sticky, then add a little flour. Cover with cling film and place in the fridge for 15-20 minutes.

  • Step 4

Divide the dough into small pieces. Prepare your work surface by dusting with a thin layer of flour. Roll out a piece of dough with a flagellum and fold it into a knot. Put the blanks on the prepared baking sheet.

  • Step 5

Lubricate the surface of the products with vegetable oil. Preheat the oven to 180 degrees and bake for about 15 minutes. We do not fry the cookies too much, they should turn out ruddy and tender. While the dessert is cooling, prepare the glaze for it.

  • Step 6

Gradually add lemon juice to powdered sugar and mix. Add to the consistency you need.

  • Step 7

Pour the finished glaze over well-cooled products. Dessert is ready. There is tea left and you can start tasting.

Tips & variations

  • To get more citrus juice, roll a whole fruit with pressure in your hands or on a plank.

  • Instead of lemon, you can use other citrus fruits, such as lime or orange.

  • To make the texture of finished products smoother, 30-50 g of flour can be replaced with corn starch.

  • Love to experiment? Add some ginger or cinnamon to the dough.

  • Regular sugar can be substituted for brown sugar to give the cookies a caramel hue and a more golden brown.

  • If you add a little beetroot juice to the dough, the cookies will be soft pink, and this will not affect the taste.

I love shortbread cookies, I wrote down the lemon glaze recipe in my notes. This is an interesting, and most importantly unusual option. I will delight my family with this delicacy at the weekend, I just want to try it with an orange. I’ll write later how it turned out.
