Oven baked potatoes with pork are a versatile dish that can be served for lunch or dinner. It always turns out incredibly tasty and never gets boring.
This dish can be prepared not only for usual dinner, but also for festive one. On the one hand, it is easy to prepare, on the other hand, it has a great rich taste and fragrance. In any case, it will help to feed a large company without much effort.
Optionally, the recipe can be supplemented with any vegetables such as fresh bell pepper, zucchini, eggplants, as well as any frozen.

Step by step method

Cut the pork into small pieces and put them into a deep marinating bowl.

Add some mayonnaise, salt, seasonings, lemon juice, garlic to the meat.

Mix everything well, put the bay leaf and leave to marinate for 20-30 minutes.

Peel potatoes, wash well and cut into small pieces. Transfer to a large deep bowl.

We peel a large onion. Cut it in half and chop it randomly. Add to potatoes.

We do the same with carrots: peel, wash and cut. We put them to other vegetables.

Add some vegetable oil, salt, pepper and basil. Mix well.

Put a layer of the potatoes on a baking sheet, put a bay leaf on the top. Pour in a little water.

We put marinated meat and pieces of butter on the potatoes.

Sprinkle with chopped fresh dill. Cover the dish with foil. Make holes in the foil with a toothpick. We place the baking sheet to the oven, which we preheat to 200-220 degrees. Bake for about 50 minutes.

A few minutes before taking out, remove the foil and return the dish back to brown a little.

Serve the potatoes with pork on plates hot. You can add some salad of fresh vegetables in summer or delicious canned ones in winter.

Potato baked with pork is a very tasty and satisfying dish. But I would use chicken instead of pork. After baking, chicken meat is more tender. Well, I would probably add some sauce.
