Step by step method
Step 1
Finely chop the peeled onion. Heat up a pan with 2 tbsp. oil and fry the onion until soft and lightly golden.
Step 2
In the meantime, prepare the mushrooms - rinse, cut into medium-sized pieces. Move the browned onion to one side of the pan, put the mushrooms on an empty surface.
Step 3
The first 3 minutes, evaporate the juice that stands out. When there is no more liquid in the pan, you can add a little more oil. Mix mushrooms with onions and fry together over medium heat for about 2 minutes. Season the mixture lightly with salt and cool completely.
Step 4
Peel potatoes, wash and grate on a fine grater.
Step 5
Sprinkle the potato mass with salt so that it releases the juice faster. Wring well with your hands, leaving dry chips.
Step 6
Transfer the cooled onion-mushroom mixture to raw potatoes, then beat in the egg.
Step 7
Add the desired portion of wheat flour, sprinkle with ground pepper. Mix thoroughly.
Step 8
Put the resulting mass with a spoon into vegetable oil heated in a pan. Make the fire medium, cover with a lid. After about 3 minutes, when one side is well browned, turn the draniki over to the other side and fry in the same way.
Step 9
For the sauce, put sour cream in a bowl, add garlic, passed through a press, to it. Rinse the dill, tear off the thick stems, finely chop the leaves with a knife and add to the sour cream. Stir the mixture carefully.
Step 10
After frying, put the draniki on paper napkins to absorb excess fat. Serve a hearty dish warm with sour cream sauce.
Tips & variations
In addition to mushrooms, you can add various other ingredients to draniki, for example, cheese, bakon, fresh herbs. And in each case, it will turn out very tasty and satisfying.
Choose the right potatoes for draniki. It should be high in starch. Young potatoes are not suitable for draniki.
You can twist the potatoes in a meat grinder or in a food processor. But it is believed that the most delicious pancakes are grated by hand.
In the finished potato mixture, you can add 1-2 tablespoons of starch. This is just in case you doubt the amount of starch in the potatoes.
It is necessary to cook potato fratters in a well-heated pan. The vegetable oil should cover half of the potato mixture. Then they will turn out crispy and ruddy.
So that potato fritters are not too greasy, put them on paper napkins. They absorb unwanted fat.
Cook draniki so that you can eat them hot at once. When they lie down, the taste of potato fritters will change.
