Everyone loves split pea soup. And it doesn’t matter at all what recipe it is prepared for, with or without meat, with smoked meats or regular chicken. To get a rich and mouth-watering soup, you need to know just a few secrets of its preparation.

  1. The first concerns the main ingredient, that is, the peas themselves. On sale you can find cereals in the form of whole peas, their halves or completely crushed. The cooking time depends on this choice, but it is enough to soak the peas for a couple of hours, and preferably overnight, and this problem is solved. By the way, the cooking time depends on personal preferences. Some like it when the peas float in the soup, others when they are completely mashed.
  2. The second secret concerns the richness of the broth itself. Many recipes suggest skimming the foam that appears after boiling. You should not do this, it is better to carefully drown it in the broth. After all, it is the foam that gives the dish the desired density.
  3. And the last secret says that you need to salt and season pea soup at the very last moment – about 5-10 minutes before the end of cooking. The fact is that while peas, meat or smoked meats are being cooked, the liquid boils away, and salt and other seasonings remain and become more concentrated. And if you salt the soup at the very beginning, then in the end you can get just an inedible dish.

And to save time, you can cook pea soup in a slow cooker. To do this, just use our photo recipe.

Tips & variations

  • If you want the peas to boil completely and turn into porridge, soak it in cold water first. The longer the peas will be filled with water, the faster it will reach readiness.

  • If you want to cook the soup faster than the recipe implies, take not whole, but split peas.

  • To make the prepared broth clear, thoroughly (at least 5 times) wash the peas before placing it in the slow cooker.

  • You can cook pea soup without meat at all. It will still be delicious. But if you want to add sophistication to the first course, add hunting sausages to your own taste, you will immediately feel an unforgettable smoked aroma.

  • Add traditional spices (bay leaf, ground pepper, dried garlic), they will add some zest.
