The hot cheesy meatball soup has a rich and delicate taste of processed cheese, which blends harmoniously with other ingredients. Step by step method

We take products from the list. Minced chicken can be replaced with pork or mixed, take any pasta, as long as it is small.

Peel potatoes, wash thoroughly and cut into small pieces.

We shift the potatoes into a saucepan (3-4 liters), fill with water and put on medium heat.

Pour half a teaspoon of paprika and the same amount of salt into the minced chicken, mix everything well.

With wet hands, make small meatballs.

Grind the peeled carrots on a grater.

When the water boils, send the meatballs to the pan. As soon as they surface - grated carrots.

Cut the onion and garlic clove into cubes.

Fry the onion in vegetable oil. When it starts to brown, add the garlic and stir-fry for another minute.

Add onion with garlic and processed cheese to the soup (they can be divided into several parts to dissolve faster).

When the broth acquires a milky hue, reduce the heat almost to a minimum, pour in the dried herbs and pasta.

Finely chop fresh herbs: parsley and dill.

Let's try the broth. If necessary, salt. Add chopped herbs, turn off the heat and cover the pan with a lid.

Tips & variations

The processed cheese must be of very good quality. Cheap cheese will ruin the dish. You can buy cheese with some additives.

Minced meatballs can be anything. If you take pork, the soup will be more fatty and satisfying.

Take smaller pasta, they look better in the dish.

Don't like pasta? Don't add it to soup. Then you can add more potatoes or dilute the soup with a little semolina. It will add thickness.
