The weight of the fish should be about 300 g. When salted, mackerel gives off moisture abundantly. Small fish will be too dry.
Take fresh or frozen fish. Preferably with head and innards. This makes it easier to determine freshness. The carcass should be elastic, the aroma should be unobtrusive, the color should be light gray with characteristic stripes.
