Green beans are a very nutritious, tasty and healthy product. However, many housewives use it only fresh, not suspecting that it can be salted, fermented and even pickled for the winter. Moreover, canned asparagus or green beans can be combined with different vegetables for ready-made snacks.

We offer an excellent option for harvesting for the winter – green beans in jars. Everything is done very simply and quickly.

You can choose the cooking time yourself. It takes 7 minutes to get crispy pods. If you cook the green beans for about 15 minutes, they will be softer. From 1 kg of beans, 3 jars of 700-800 g will be obtained.

Step by step method

  • Step 1

    We wash the pods well, cut off the ends of each with ordinary scissors on both sides - and where the stalk is attached, and a thin tail.

  • Step 2

    Pour 3 liters of water into a saucepan, bring to a boil. Boil for 7-15 minutes. Salt is not needed yet. We pour into a colander.

  • Step 3

    We sterilize jars in any convenient way: over steam, in the oven, microwave. We wash the lids well, even if they are new. We put the boiled pods in the length of a glass jar.

  • Step 4

    This is how the jar, ready for twisting, should look like. Garlic can be added at this stage if desired. For one jar - 4-5 cloves cut with washers.

  • Step 5

    For brine in 1 liter of hot water, dilute 1 tbsp. salt, 2 tbsp. sugar and fruit vinegar. Pour into filled jars.

  • Step 6

    We put them in a pot of water, cover and boil for 5 minutes.

  • Step 7

    Close tightly with hot lids. Turn upside down, cover with a thick blanket. We leave for 10-12 hours. Then we turn it over and send it to the storage place.

  • Step 8

    An amazing appetizer for any table, including a festive one, is ready. Be sure to try marinating green beans in this way. Experiment a little with the cooking time, and you will get the perfect dish that all your family and guests will love. Enjoy your meal!

Tips & variations

  • The pods should not be sluggish and overripe, otherwise hard fibers will be present in the finished dish.

  • The pods must be a bright green color, the beans themselves are quite mature, but soft.

  • You can run your fingernail along the peel, if the skin of the pod is damaged, then it is thin and young. These beans are perfect for canning.

  • Before preservation, asparagus beans must be boiled for 7-14 minutes, and then thrown into a colander and washed with cold water. Thanks to this, after defrosting, it will not lose its juicy green color and taste.

  • Green beans can be stored in a cool place for 10-12 months. Must be stored in a closed container.
