Step by step method

  • Step 1

    We take all the necessary products and proceed.

    We cut the eggplant into plates 3-4 mm thick, sprinkle with a little salt.

    Fry on both sides in vegetable oil. Lay out on paper towels. This is necessary so that the finished dish is less greasy.

    Grind the garlic, mix it with mayonnaise to make a homogeneous sauce.

    Cut the tomato into thin slices.

Tips & variations

  • After the eggplants are cut, sprinkle them with salt (0.5 tsp. for one medium fruit), put in a deep bowl and leave for 10 minutes. During this time, juice will appear, and bitterness will go away with it.

  • Next, the eggplant must be washed in clean water. This process will get rid of excess salt that may have remained on the surface. Although sometimes it is enough just to get wet with napkins.

  • You can reduce the amount of fat absorbed during frying. To do this, grease the plates on both sides with vegetable oil, and fry in a dry, well-heated frying pan.

  • We remove the fried blanks from the pan on paper napkins. This step will remove excess fat.

  • Tomatoes, cottage cheese, as well as any cheese - hard, smoked, pickled and even melted - are perfect as a filling. You can also take carrots, including Korean, mushrooms and other products. This is one dish where you can experiment a little.

    I really love eggplant dishes. It’s always interesting to try a new recipe. I think that it is not necessary to fry eggplants, but you can bake them in the oven. I will definitely make these rolls in the near future.
