The original recipe included zucchini, tomatoes, peppers, onions and garlic. Eggplant is also added to the modern version of the dish.

Step by step method

  • Step 1

    We will prepare all the necessary products so that the process goes on continuously.

    For the sauce, take 3-4 tomatoes, cut the skin in the stalk area and pour boiling water for 30 seconds. Peel and cut into medium sized cubes. Pour into a deep bowl.

  • Step 3

    We clean the seeds from the pepper and chop it into pieces. Cut the onions the same way.

  • Step 4

    Pour a little olive oil into a hot frying pan and fry the onion in it until translucent. Salt and pepper.

  • Step 5

    Add pepper here and simmer everything together for 10 minutes until soft. We spread the chopped tomatoes, leave to languish in the pan for 7 minutes. Sugar the sauce and mix thoroughly.

    Remove from heat and puree with a blender until smooth.

    We cut the eggplant and zucchini into rings 3 mm thick, and the remaining tomatoes - 4 mm.

    Pour the sauce on the bottom of the baking dish, put the vegetables on top in the following sequence: zucchini-eggplant-tomato.

    For a special dressing, pour olive oil into a bowl, put spices and squeeze the garlic through a press. Mix and brush vegetables.

    We cover the form with foil, put it in the oven for 30-40 minutes at 180 degrees. After the specified time, remove the foil and bake the ratatouille for another 30 minutes. Serve a beautiful and healthy dish in a warm or completely cooled form.

  • For real ratatouille, only fresh vegetables are used, the frozen version is categorically not suitable.

  • To make the dish look attractive, you need to cut the ingredients into large pieces - circles or cubes.

  • If you want to treat guests with French food, remember one more secret - do not cook ratatouille in advance. It can retain its appearance and original taste for a maximum of one day.

  • Choose firm tomatoes that are easy to cut with the skin off.
