One of the most ideal recipes for a light salad can be considered a beet salad with feta. The dish turns out to be saturated with vitamins, useful not only for health, but also for figures. Everyone can cook it and will not spend a lot of time on it.
In order for the beets to have a brighter taste and color, it is better not to cook it in the traditional way, but to bake it in a microwave or oven. The last option is proposed in the photo recipe.
Step by step method
Wash raw vegetables thoroughly under running water.
Wrap each root crop in foil and place on a baking sheet. Bake in the oven at 180 degrees for about half an hour.
Pour mustard into a bowl, pour in balsamic vinegar (you can take regular or lemon juice), vegetable oil. Mix everything thoroughly with a whisk. At the end, salt and pepper a little.
Cut the cheese into medium sized cubes. If it is too salty, it is advisable to soak the cut in water or milk for an hour.
We take the vegetables out of the oven, do not cool, but immediately carefully peel them.
Shred straws and send to a bowl.
Pour the still warm beetroot straw with the prepared sauce and mix.
Put lettuce leaves on a plate, after tearing them with your hands.
Place cheese cubes on top. Drizzle with a little olive oil and sprinkle with beetroot slices in the sauce. Sprinkle a little with pepper.
Beetroot salad turns out to be very light and healthy, and the unusual flavor of pickled root vegetables goes well with salty cheese.
