There is a way out – a gingerbread banana cake without baking is cooked many times faster, it always turns out delicious. And according to our recipe, even a child can cope with cooking.

Gingerbread and banana cake is very easy to prepare. Sour cream is quite liquid, so the “cakes” are quickly soaked. So, in a couple of hours it will be possible to try a delicious dessert.

Step by step method

  • Step 1

    Pour the sour cream into a deep bowl, add powdered sugar and beat thoroughly with a mixer, gradually increasing the speed.

    We cut the gingerbread as in the photo: across into small plates with a thickness of not more than 2 cm.

    Peel the banana and cut into slices.

    We cover the form with cling film and put pieces of gingerbread on the bottom.

    Alternate layers, pour plenty of cream on top, but leave some for the top. Cover with foil and put in the fridge for several hours.

    After the time has elapsed, we take the cake out of the mold, remove the film and grease the remaining cream on top. We decorate at our discretion. As a simple decor, crumbs from gingerbread are suitable.

Tips & variations

  • Gingerbread cookies for the cake are suitable for any, those that you like best: chocolate, vanilla, stuffed, honey, ginger. You can also make your own gingerbread cookies for dessert.

  • Choose only fresh gingerbread. The fresher and softer they are, the more they will look like a biscuit after impregnation with cream.

  • For impregnation of gingerbread, sour cream or custard, butter with condensed milk are perfect.

  • Take sour cream for cream fat from 20%, and do not replace powdered sugar with sugar, otherwise the cream will be liquid. If sour cream is not fat enough, add a pack of sour cream thickener. Homemade sour cream is good.

  • To make the cake more interesting, use flavorings. For example, with bananas, the product will turn out to be sweeter. If you want a dessert option with a slight sourness, add kiwi. Canned pineapples will add juiciness to the product, and fried nuts will add satiety. It will be very tasty to add sour dried or dried berries: cherries, cranberries, lingonberries.

  • Decorate the finished cake however you like. For example, with pieces of fruit, sprinkle with gingerbread crumbs or coconut flakes, pour fudge, melted chocolate or grate chocolate.
