When the cold comes, you want something hot, warming. But at the same time, easy. A great option is vegetable soup with cheese dumplings. It turns out hearty and incredibly tasty.
A light vegetable soup with tender cheese dumplings can be cooked both on ordinary drinking water and on the basis of ready-made broth (mushroom, vegetable or meat). If using plain water, you can add bouillon cubes if desired.
Any hard cheese is suitable for making dumplings: cheddar, parmesan, dutch. The dough can be supplemented with ground paprika, pepper, turmeric, cardamom or nutmeg.

Step by step method

Step 1
Prepare dough for dumplings. Grate the cheese on a medium grater, then mix with softened butter and egg.

Add salt to the mixture (if you want, and ground pepper too) along with dill and flour. After thorough mixing, leave the finished dough for dumplings alone.

Finely chop the peeled garlic and onion. Remove the skin from the potatoes, cut them and immediately soak them in cold water. Peel and chop the carrots on a coarse grater or cut into strips. Cut the pepper, peeled from seeds and partitions, into wide (1.5 cm) strips.

Pour a little oil into the pan, fry the carrots and onions for about a minute.

Then add garlic and pepper, fry everything together for another two minutes.

In parallel, boil the broth (water) in a saucepan, throw bay leaves into it along with potatoes.

Roll the cheese dough into small balls (smaller than a walnut), bearing in mind that they will definitely increase during cooking.

As soon as the broth with potatoes boils, dip the cheese dumplings into it along with the fried vegetables and spices.

Boil the vegetable soup with cheese dumplings until the potatoes are tender, stirring gently from time to time.

Serve such a first course hot at the table and try to eat it in “one sitting”, since tender dumplings lose their original taste when stored in broth.
Tips & variations

If the dumpling dough is too thick, add a drop of water. If it turns out to be liquid, add a little more flour, but do not overdo it, otherwise the dumplings will turn out tough.

Moisten your hands with water when making dumplings - then the dough will not stick to your hands.

An excellent addition to this soup will be cauliflower or broccoli florets, greens, celery and hot capsicum.
