Flatbreads with cottage cheese and cheese are sometimes called “quick khachapuri”. They are prepared really very quickly and can help you out at any moment. If guests suddenly arrive, you will definitely know how to treat them.

This type of pastry belongs to traditional Georgian cuisine, but today it is cooked in almost all countries of the world. The dish can be safely classified as “lazy”. The dough is prepared on kefir, so you don’t need to wait until it fits. It will take a little more than half an hour for all the preparation, including frying the flatbreads in a pan. So you can cook them even late in the evening. The main thing is to have all the ingredients in the fridge.

Step by step method

  • Step 1

    Finely chop well-washed herbs. We also send cottage cheese, grated cheese on a fine grater, drive in an egg, add hot pepper and salt.

    Stir the stuffing and set aside. After that, break the second egg into a measuring glass, pour in vegetable oil, put salt. Pour kefir into a bowl and stir.

    Sift the flour into a deep bowl. Pour sugar and baking powder into it. We mix everything and make a small hole into which we pour the kefir mixture.

  • Step 4

    Knead the dough first with a spoon, and then with your hands on the table, sprinkling the work surface with flour. Divide the dough into 12 equal parts and roll them into balls.

  • Step 5

    We roll out each ball, put 1-2 tablespoons of the filling in the middle. Then we collect the dough into a knot, lightly press it down, turn it over with the seam down and carefully roll it into a layer 4-5 mm thick.

  • Step 6

    Fry the flatbreads in a hot dry frying pan over low heat until browned on both sides.

  • Step 7

    We stack the products in a pile and grease with butter. Cottage cheese and cheese flatbreads with herbs are fragrant, tender and very tasty.

Tips & variations

  • You can take any herbs, cottage cheese is better dry, crumbly. Kefir and eggs should be at room temperature.

  • To make the flatbreads even softer and more fragrant, grease each with melted butter.

  • If you want, add more garlic passed through the press for piquancy.

  • To make the pastries airy and lush, it is important to knead the dough well - at least 10 minutes.

    Very fragrant tortillas, especially if you add garlic. When you lubricate them with oil, they become even softer. You can also add some spices, for example, a little turmeric or coriander, but if you like spices.
