Step by step method

  • Step 1

    First, prepare the sauerkraut. Rinse it with a colander, let the water drain. Lightly fry in sunflower oil until moisture evaporates.

    Pour the cabbage with tomato juice, cover a lid, simmer for 15-20 minutes, stirring occasionally. If you don't have tomato juice, use tomato paste diluted with water.

  • Step 3

    Transfer the stewed cabbage to a clean plate and set aside.

  • Step 4

    Cut each sheet of lavash into transverse strips 10-12 cm wide.

  • Step 5

    Place 1-1.5 tablespoons of stewed cabbage on the edge of the lavash.

  • Step 6

    Fold the products into triangular envelopes.

  • Step 7

    Brush both sides with beaten salted egg.

  • Step 8

    Quickly fry the pies until browned (40-50 seconds on each side). To remove excess oil, blot the finished products with a paper towel.

  • Step 9

    The pies are best served hot. Separately, in a gravy boat, serve sour cream (add herbs or garlic to taste).

Tips & variations

  • For the future, it is not worth preparing such pies. They must be consumed immediately, otherwise they will soften and lose their taste.

  • If the lavash is dry, you need to sprinkle it with water and wrap it in a towel for half an hour.

  • Greens added to the filling will make it more tasty and rich.

  • If sauerkraut is not available, you can use fresh cabbage. Just simmer it for a longer time.

  • Are you on a diet? Fry pies in a pan without adding vegetable oil. They won't be as greasy.
