Lavash is very popular in Eastern countries. It is wrapped in shawarma, rice or halva, served with a kebab dish. Lavash is baked in the oven, fried in a pan, cold appetizers are made. What prevents us from mastering the wisdom of the East? For example, use it instead of dough for cabbage pies? This will save a lot of time, and the fried pies turn out to be dietary and very tasty.

Lavash pies are a quick pastry that is convenient to take with you on a picnic or to work as a snack. It takes only a few minutes to prepare hearty and tasty puffs. As a filling, not only cabbage is suitable, but also meat, fruits, cheese and even canned fish.

Step by step method

  • Step 1

First, prepare the sauerkraut. Rinse it with a colander, let the water drain. Lightly fry in sunflower oil until moisture evaporates.

  • Step 2

Pour the cabbage with tomato juice, cover a lid, simmer for 15-20 minutes, stirring occasionally. If you don't have tomato juice, use tomato paste diluted with water.

  • Step 3

Transfer the stewed cabbage to a clean plate and set aside.

  • Step 4

Cut each sheet of lavash into transverse strips 10-12 cm wide.

  • Step 5

Place 1-1.5 tablespoons of stewed cabbage on the edge of the lavash.

  • Step 6

Fold the products into triangular envelopes.

  • Step 7

Brush both sides with beaten salted egg.

  • Step 8

Quickly fry the pies until browned (40-50 seconds on each side). To remove excess oil, blot the finished products with a paper towel.

  • Step 9

The pies are best served hot. Separately, in a gravy boat, serve sour cream (add herbs or garlic to taste).

Tips & variations

  • For the future, it is not worth preparing such pies. They must be consumed immediately, otherwise they will soften and lose their taste.

  • If the lavash is dry, you need to sprinkle it with water and wrap it in a towel for half an hour.

  • Greens added to the filling will make it more tasty and rich.

  • If sauerkraut is not available, you can use fresh cabbage. Just simmer it for a longer time.

  • Are you on a diet? Fry pies in a pan without adding vegetable oil. They won't be as greasy.

Thanks for the recipe, I did it strictly according to the instructions, and it turned out very tasty. Previously, when I made this dish on my own, I had sour cabbage, but now everything turned out much better.

An ideal recipe if you are too lazy to mess with the dough. After all, you can wrap anything in pita bread and it will definitely be delicious. I even make pizza using pita bread as a basis. Fast, simple, convenient. And how many breakfast options there are, you can swallow your tongue. I even came across a recipe for chebureks, where pita bread is used instead of dough.
