Step by step method

  • Step 1

    Melt the butter in a heavy bottomed saucepan, add a glass of sugar and two tablespoons of honey. When the mixture becomes homogeneous, add soda, mix thoroughly for a few seconds and remove from heat. The mixture will foam and smell strongly of caramel.

  • Step 2

    While the honey mixture is cooling, prepare the custard. Mix remaining sugar and flour. Break one egg into them, pour half a glass of milk and mix everything until completely homogeneous. Pour in the remaining milk and bring to a boil over low heat, stirring constantly.

  • Step 3

    Stir the eggs into the cooled honey-butter mixture, and then pour in the flour, bring, stirring, until a homogeneous consistency. Spread the dough over the baking sheet.

  • Step 4

    Oven temperature: 180°. When ready, immediately remove the cakes from the baking sheet, otherwise they will stick and tear.

  • Step 5

    After cooling completely, assemble into a single cake, remembering to leave trimmings for sprinkling. To make the honey cake juicier, you can miss the bottom of the plate too.

  • Step 6

    The taste of honey cake will open after two hours, when it is soaked at room temperature. The cake comes out tender, soft and fragrant.

  • The most fragrant honey is used for baking. If the smell is weak, then put a little more honey than according to the recipe. Baked cakes should fill the kitchen and the whole house with aroma - a sure sign that everything is right.

  • The dough turns out a little thicker than for pancakes. It must be spread over several layers. It will seem that it is not enough, but nothing like that! Feel free to spread the dough on a baking sheet with a spoon or wet hands. The layer will come out thinner, but it will rise. For lush cakes, you need to divide the dough into two parts, for more familiar ones and with a crunch - into 3-4.

  • Honey cakes bake very quickly. It's best to keep an eye on the oven. It might take five minutes or less. They should have an even, dark color.

  • From these products you will get a two-layer honey cake with a diameter of 27 cm.

  • Taste the cakes: if there is not enough sweetness, you can coat the cakes with a thin layer of honey. And already on top of it - custard.
