Classic hodge podge soup is a hearty first course, most often combining several types of meat or fish, which is usually served with sour cream, olives and lemon slices. Of course, a hodge podge from an expensive restaurant will differ from homemade soup, but it should be borne in mind that a homemade version may turn out to be more fragrant, appetizing and tasty.

Hearty stew with meat and several types of sausage in a rich broth is a great option for a family lunch or dinner. To make it work the first time, it is recommended to stick to our recipe and follow the tips:

  • It is better to boil the broth in advance so that it has time to brew a little.
  • For lovers of lighter soups, the broth can be replaced with plain water.
  • To cook the perfect broth, you need to take lean meat on the bone. This is perfect for beef.
  • Hodge podge soup will have a richer and spicier taste if it includes different meat products: smoked meats (sausages, boiled sausage, salami, smoked ham), varieties of meat or even liver, tongue.
  • To make the soup thicker, you can add a stir-fry of butter and flour to it.
  • Salt and pepper the dish at the very end. After all, meat products, tomato and cucumbers will provide a certain degree of salinity.

Step by step method

  • Step 1

We lay out on the table the products that will be needed in the course of cooking.

  • Step 2

For the broth, pour water into a saucepan with a volume of 4 liters. We lower the chicken breast with sprigs of greens, spices and garlic and cook for about 60 minutes after boiling.

  • Step 3

While the broth is cooking, grate the carrots on a coarse grater, preferably on a special nozzle for Korean salads.

  • Step 4

We chop the onion arbitrarily, but not very large.

  • Step 5

We cut pickled cucumbers into long and thin strips.

  • Step 6

In a deep frying pan, fry onions and grated carrots until golden brown.

  • Step 7

Then add cucumbers to the fried vegetables. Fry all ingredients for about 4 minutes.

  • Step 8

We put tomato paste, pour in water and vinegar. Simmer covered for another 10-11 minutes.

  • Step 9

When the broth is cooked, we take out the chicken fillet, cool it slightly and cut into cubes.

  • Step 10

Grind sausages and salami in a free form.

  • Step 11

Put the contents of the pan into the broth and bring to a boil over high heat.

  • Step 12

At this moment, we send meat products to the hodgepodge: chicken fillet, sausages and salami. Bring the soup to a boil again.

  • Step 13

While the hodge podge is warming up, cut the olives.

  • Step 14

We send them to the pan, turn off the fire. Cover with a lid and leave to infuse for at least 15 minutes.

  • Step 15

To serve, cut the lemon into slices and finely chop the greens.

  • Step 16

We serve the classic homemade hodge podge hot, with a slice of lemon and a pinch of fresh herbs.
