Having conquered Greece, the Romans brought their own touches to the local cheesecake recipe. Now eggs were added to the mixture of flour, grated cheese and honey. Along with the expansion of the boundaries of the Great Roman Empire, the geography of the delicacy also expanded. In the first millennium AD it was already known and loved throughout Europe, however, local sweet tooth preferred to make it sweeter than was customary in their homeland.

We have known cheesecake since the end of the 19th century. It is customary to prepare it using cream cheese. And today we will cook it together with you!

  • Cheesecake ingredients should be at room temperature.

Step by step method

  • Step 1

    Cooking curd dough. Place the cottage cheese in a deep container and knead it thoroughly with a spoon, removing any lumps.

    Wash the eggs under running water. You will need separate yolks and whites. Carefully separate the whites, pour into a tall glass or other suitable container for whipping and leave to cool. Add the yolks to the curd immediately.

    Mix cottage cheese with yolks. Add sugar, sour cream, add semolina and baking powder.

  • Step 4

    Mix the curd mass well until smooth. Beat the chilled whites in the air foam until thick. You can add a little salt while beating. Put the whites foam in a bowl with the curd mass and mix very gently.

    The dough should be creamy and airy.

    Put most of the curd mass on the bottom of the silicone mold. Spread the washed and dried raspberries evenly on top.

    Cover the berry filling with the remaining curd mass.

    Smooth the top of the cheesecake with a spoon or wide knife.

    Bake the cheesecake in a preheated oven over low heat for at least 30 minutes. In the process of baking, it should acquire a uniform golden color and become dense. You can test the readiness of the cheesecake by piercing it in the center with a wooden skewer.
