Dishes with cottage cheese are very tasty and healthy, they are rich in protein and calcium. They can and should be included in the diet not only for children, but for the whole family. The simplest and most popular cottage cheese dish is pancakes with cottage cheese. They are good for both breakfast and a light dinner.
Step by step method
We shift the cottage cheese into a suitable bowl and knead with a fork.
Crack an egg into it and add a pinch of salt. We mix.
We add sugar. Mix thoroughly again.
Sift flour (1 tablespoon) into a bowl and knead until a homogeneous mass is obtained.
Pour raisins with hot water and let stand for 3 minutes. We drain the water, rinse under running water, cleaning from twigs and debris. Pat dry with paper towels and place in a bowl.
Mix all ingredients well.
The mass for cottage cheese pancakes should come out not too thick, but not liquid either. Thick can be diluted with a small amount of milk, and add more flour to the liquid.
Sprinkle the table with the remaining flour and form small round products. From the presented amount of products, 6 pieces of pancakes are obtained.
Pour vegetable oil into a heated frying pan and spread the pancakes. Fry over medium heat for about 2-3 minutes until golden brown.
Carefully flip to the other side and fry for another 2-3 minutes.
Serve the cottage cheese pancakes hot with sour cream or classic yogurt. When cold, this dessert dish will be just as delicious.
Tips & variations
You can take cottage cheese of any fat content, homemade or store-bought, as long as it is crumbly and moderately moist.
You can make pancakes with cottage cheese not only with raisins, but also with any dried fruits, fresh fruits and berries or
with chocolate drops.
Choose cottage cheese with a fat content of 5% (up to 9% is possible), the structure is granular and crumbly.
If you add too much sugar, the cheesecakes will burn during cooking.
If the cottage cheese is too sour, it is better to sprinkle the finished products with powdered sugar or eat them with jam or honey.
