One of the advantages of zucchini is a mild, neutral taste that goes well with other vegetables, cheese and mushrooms. Most often, zucchini is fried, stewed or pickled. You can quickly bake them in the oven. But if you want to get something more interesting, try making rolls zucchini with mushroom filling. It turns out an excellent dietary dish, juicy and tender. It looks so impressive that it’ll become an ideal snack on any, even a festive table.

Zucchini roll is good because it is equally tasty in warm and cold form.

Step by step method

  • Step 1

    We rub the zucchini on a grater. We add a little when the juice appears, squeeze it so that the finished roll is not too wet and does not fall apart during cooking.

  • Step 2

    We clean the carrot and rub on a coarse grater. We send it to the zucchini.

  • Step 3

    We add a fresh egg, flour, salt and pepper to the vegetable mass. Mix until smooth.

  • Step 4

    Pour the mixture onto a baking sheet lined with parchment paper. Level into a layer 2 cm thick.

  • Step 5

    Bake in an oven preheated to 200 degrees for about 20 minutes.

  • Step 6

    We cut the onion into quarter rings or cubes, just chop the garlic. Fry in a pan until half cooked.

  • Step 7

    Mushrooms cut into cubes, send to the pan. Fry until the liquid evaporates and a golden crust forms.

  • Step 8

    Now add sour cream, mix and simmer for 5 minutes. We cool down a little.

  • Step 9

    We spread the mushroom filling on the zucchini base and level it in an even layer over the surface.

  • Step 10

    Sprinkle evenly on top with finely grated hard cheese and herbs.

  • Step 11

    We twist it into a roll, send it to bake in the oven, heated to 200 degrees for 10 minutes.

  • Step 12

    Cut the finished roll into portioned pieces. The appetizer can be served both hot and cold.

Tips & variations

  • It is advisable to choose young zucchini for the cake. If the zucchini is large, remove the seeds from it.

  • Chicken eggs are suitable for medium size (45-50 grams each), and add wheat flour of the highest or first grade.

  • If there is no sour cream on hand, you can replace it with mayonnaise. Any cheese will do - hard or semi-hard, whichever you prefer.

  • The roll is better cut into portioned pieces after complete cooling, does't break or crumble.

  • Store the finished roll in the refrigerator, and before serving, decorate it as your fantasy tells.
