Syrniki are tender, lush and very tasty cakes, from which it is difficult to gain excess weight. In this recipe, I will use semolina, with it cheesecakes are airy and light. To diversify the taste of Syrniki, you can also add various berries and fruits to their composition. Bananas are ideal.

In addition, to make cheesecakes spicier, various spices can be added to the dough: cinnamon, cardamom, saffron. Dried fruits are also great, but they must first be crushed.

Tips & variations

  • The curd mass for the preparation of Syrniki must be very dry, otherwise it will not work to achieve the required dough consistency. Give preference to non-fat cottage cheese (no more than 9%).

  • Use a small amount of vegetable oil for frying.

  • Syrniki are fried only on medium heat: if you fry them on a small one, they will absorb all the oil, and if on a strong one, they will burn.

  • Once you've browned one side of the cheesecakes and turned them over, cover the pan with a lid. So cheesecakes are well baked and will not be raw inside.

  • If you like sweet pastries, you can add more sugar to the dough. But keep in mind, the more sugar in the dough, the faster it can burn when baked.
