Step by step method

  • Step 1

We take the products that are necessary for the preparation of the original creamy vegetable soup.

  • Step 2

We clean two medium-sized potatoes, wash, cut into small pieces and set to boil in a small amount of water.

  • Step 3

We disassemble the broccoli into inflorescences, remove the stem, it will not be needed.

  • Step 4

Peel a large onion and garlic cloves, cut into cubes, saute in butter.

  • Step 5

After the potatoes are cooked, put the broccoli in the pan, salt to taste. If necessary, add a little water so that the cabbage is lightly covered. We cook 5 minutes. Drain the vegetable broth, add the sautéed onions and garlic to the cabbage and potatoes.

  • Step 6

Blend until smooth. Pour cream into puree, mix. The density can be controlled at your discretion by adding vegetable broth. Put on the stove and bring the soup to a boil.

  • Step 7

Pour into bowls and decorate as you wish. It is best to use arugula salad for these purposes. Its spicy taste goes well with broccoli.

Tips & variations

  • Nutritionists recommend including broccoli soup in your diet at least twice a week.

  • Broccoli has a natural bitterness, which is why milk or cream is often added to the soup. They neutralize the bitter taste.

  • When choosing broccoli in the store, pay attention to the color and integrity of each floret. The surface should be free of stains, damage, mold.

  • To get rid of insects and debris, soak the broccoli in water. Sprinkle salt and leave for 30 minutes, then drain and rinse with clean water.

  • The head itself does not have to be thrown away. It can be finely chopped and also boiled together with inflorescences. This part of the vegetable is completely edible and doesn't taste too different.

  • It goes well with broccoli soup with any fresh herbs and hard cheese. It can be crushed, added to the pan and stirred until dissolved. And you can portion it directly into the plates before serving. The main thing is to choose those cheeses that melt easily.

I sometimes cook this soup without cream, it’s still delicious, garlic gives a pleasant taste. I don’t throw away the broccoli legs, but add them to other dishes, for example, finely chop them and put them in scrambled eggs with vegetables.

I made Pureed Broccoli Soup and I love the taste. But the consistency is a bit runny. Probably didn’t get the proportions right. Next time I’ll follow the recipe. I also recommend serving this puree soup with wheat or rye bread croutons.

готовила всё по рецепту, вышло очень вкусно! но сама консистенция была немного жидкой, возможно немного ошиблась в пропорциях, но все равно хороший рецепт!
