Step by step method

  • Step 1

Wash the fruit well and cut into small pieces. Grind the manderin with an immersion blender. At the same time, be sure to leave the peel - it will enrich the dough with fragrant essential oils, and in the finished baking it will resemble pieces of candied citrus fruits.

  • Step 2

Beat by hand or with a mixer three eggs, sugar, vanilla sugar.

  • Step 3

When the mass increases a little and turns white, stir in the vegetable oil and citrus puree, bring to a smooth consistency.

  • Step 4

Mix flour and baking powder and sift, add to the mass. Knead the dough quickly.

  • Step 5

To make the finished figures easy to remove, grease the molds with a brush dipped in oil. You can use portioned molds of different sizes or bake in one large one. Any will do - silicone, paper or metal.

  • Step 6

Fill the forms 2/3 with the dough. Gently place in preheated oven and leave for 15-30 minutes (depending on the size of the pieces). The temperature for baking is 180 degrees, the "top - bottom" mode.

  • Step 7

After the cupcakes have cooled, you can decorate them as you like. For example, cream, sugar icing, powder, chopped nuts or caramel crumbs.

Tips & variations

  • The oven should be heated to 180 degrees. Bake the muffins until they are browned, and you can check the readiness with a toothpick. If there is no dough left on the toothpick when piercing the products, then the cupcakes are baked.

  • Baking can be left to cool in the forms, or you can immediately lay it out, for example, on a board.

  • The final chord is to sprinkle the finished cupcakes with powdered sugar or other powder.

  • You can also prepare mandarin muffins in a different way, without rubbing the pulp of the fruit with a blender. If you cut the mandarin into rings, put the mugs on the bottom of the molds, and then put the dough on top, you get a cake with mandarin filling.

  • Another baking option is interesting: cook one large cupcake in a multicooker or oven, and then cut it into portions.

  • And you can also use not mandarines, but oranges as a fragrant fruit base.
