Georgian khachapuri is a national pastry, which, by the way, was given the status of an intangible monument at home. There are several varieties of khachapuri depending on the region. In Abkhazia, for example, they cook achma from lavash. It looks like a multi-layered flour dish, reminiscent of lasagna, only without sauce. Intrigued?

We suggest not to postpone for a long time and cook achma today. What’s more, cooking it is easy. Achma from lavash is a kind of “lazy” option, it is prepared many times faster and easier, and the taste is in no way inferior to real pastries.

Step by step method

  • Step 1

Melt the butter, but do not overheat and do not bring to a boil. Let's cool down a bit.

  • Step 2

Break the eggs into a separate bowl. We add kefir to them. Then add sour cream and salt.

  • Step 3

Pour the butter into the total mass, mix thoroughly and set aside for now.

  • Step 4

Grate Adyghe and Suluguni cheese on a coarse grater, mix. We divide the cheese mass into 6 equal parts.

  • Step 5

Lavash cut into plates according to the size of the form. Dip in the egg mixture and pour into the mold.

  • Step 6

Sprinkle the first piece of cheese on top. Repeat layers until you run out of food.

  • Step 7

We send to bake at 180 degrees for about 30 minutes. Then cover with foil and bake for another 15 minutes. That's all. Juicy and fragrant achma from pita bread and two types of cheese is ready. You can serve it to the table hot or cold.

Tips & variations

  • In this recipe, it is very important to generously lubricate each sheet of pita bread in egg mixture. Thanks to it, the achma will be puffy and moist.

  • You can cook achma with cottage cheese, mozzarella and cheese. The combination of three cheeses will win the hearts of your loved ones. Treat them with delicious treats.

  • Classical achma is prepared exclusively with cheese. But to make the dish even tastier and more satisfying, you can replace the filling and cook achma with meat. It will be the most delicious cake in your life.

  • Another original recipe that will win over your family is thin pita bread with potato filling and soft fragrant onions. This is the best combination! Such a miracle pie will be a full dinner.

  • The choice of pita bread is important here. High-quality pita bread has a soft beige color. Do not buy with a brown color, because it contains a lot of margarine, and this indicates a deviation from the classic recipe.
