Cooking sushi cake and useful tips for beginners

Cooking rice, which is the basis of sushi, is a whole ceremony. The taste and appearance of the sushi cake depends on it. So, it is important to cook rice according to all the rules.

Never use long grain parboiled rice. It turns out crumbly and is suitable for making side dishes, while sushi requires rice with good gluten. It is better to choose Japanese or Korean rice.

Rinse the rice in cold water before cooking to get rid of the starch, and change the water until it runs clear. Do not use a spatula or whisk for this. Rice is washed only with hands, in a circular motion, passing it through the fingers, but not rubbing it in the palms, so that the grains remain intact.

After washing, soak the rice in cold water for at least 40 minutes. The soaked rice has increased in volume.

How to cook the perfect rice

Pour cold water into a pot of rice about one knuckle of your middle finger, or 2 cm above the rice. Keep in mind that it is better not to add 20 ml of water than to pour too much of it.

Cover the pot with a lid and place over high heat. Once the rice comes to a boil, reduce the heat to low and simmer, covered, until the moisture has completely evaporated. This will take you about 8 minutes. There is no need to stir the rice.

Don’t overcook the rice. The average cooking time for sushi rice is 8-10 minutes. Some types of rice may take a little longer to cook.

Remove the rice from the heat and let it stand covered for 10-15 minutes.

Tip: don’t be discouraged if you don’t get the sushi rice right the first time. There is no universal recipe, there are only general recommendations. Already for the second or third time you will get used to the variety of rice you have chosen, your dishes and stove.

Step by step method

    First of all, we put rice in 400 milliliters of water to cook for 15 minutes.
