Meatball soup recipe with potatoes is a very simple and tasty first course. It can be quickly prepared for a family lunch or dinner. It is not necessary to cook the broth, thanks to the meatballs, the soup will turn out rich anyway. Both adults and children will be satisfied.

The recipe uses ground turkey, it can be replaced with pork, chicken, mixed. You can take both a ready-made semi-finished product, and twist the meat yourself.

Step by step method

  • Step 1

    We take the products that will be needed for cooking.

  • Step 2

    Wash and clean all vegetables. Cut a small onion in half. One half will go into the minced meatballs, the second directly into the soup. Cut into small cubes.

    Carrots cut into strips or rubbed on a coarse grater.

  • Step 4

    We turn on the stove and put a pan with a thick bottom on the fire (it is convenient to fry, stew vegetables and cook soups in it). Pour a little vegetable oil and send onions and carrots there. Fry for 5 minutes, stirring occasionally.

  • Step 5

    While the vegetables are roasting, let's take care of the potatoes. We cut it as you like - cubes, straws.

  • Step 6

    Pour 1.5 liters of hot water into a pan with fried vegetables. After the water boils, pour rice and potatoes into it. Salt, add your favorite spices. Cook for 10-15 minutes. In minced meat we send the second half of the onion, salt and pepper. We mix everything thoroughly. We form small balls and throw them into the boiling soup.

  • Step 7

    Cover with a lid and let simmer for 5 minutes. Finely chop the greens and pour into a bowl. Turn off the stove, let it brew for 7 minutes.

    Pour the soup into bowls, not forgetting to put a few meatballs in each. You can add sour cream if you like. We invite everyone to the table.

Tips & variations

  • You can take any minced meat: chicken, pork, mixed.

  • For a lighter soup, it is better to take minced chicken, and for a hearty one - pork or beef.

  • You can cook the soup in ready-made broth (meat, vegetable) or clean water.

  • If you cook the meatballs in advance and freeze them, then it will take a minimum of time to prepare the soup.

  • If desired, you can use store-bought semi-finished products, but only from trusted manufacturers.

  • So that the meatballs do not fall apart during cooking, the minced meat must be beaten off (lifted and hit on the bottom of the bowl).

  • To prevent the broth from turning cloudy, before lowering the meat balls into it, the fire must be reduced to a minimum.

  • Roasted carrots, turmeric and curry will give the dish a golden color.

  • To make the soup lighter and more tender, you need to add a little soaked loaf to the minced meat.

    If you don’t want to get into trouble, namely, to face the fact that the minced meat will simply fall apart during cooking (this happens very often), then I recommend putting the balls after sculpting in the freezer for 3-5 minutes so that they take shape. If you like spicier cuisine, I recommend adding 1 head of garlic and cheese to the minced meat (use a garlic press or a similar kitchen tool).
