There is nothing easier than stewing vegetables in a saucepan, but in the oven such a dish turns out much tastier and healthier. For cooking, it is better to use a large clay or ceramic pot. Pot-roasted vegetables with bacon is perfect for a family lunch or dinner.

Vegetables in a pot are not only delicious, but also very healthy. Prepared in this way, they retain the maximum of their useful properties. It is better to cook such a dish in autumn and summer, when all the products can be found in the garden. It is during this period of the year that vegetables contain the greatest amount of nutrients. But even in winter, you should not give up a vegetable diet, because in almost any store you can buy frozen mixtures or individual vegetables.

Step by step method

  • Step 1

    We clean potatoes, carrots, onions, sweet peppers. We take a ceramic or clay pot, grease it from the inside with vegetable oil. We cut the potatoes into small cubes and send it to the container.

  • Step 2

    Grate the carrots on a coarse grater and lay them on top of the potatoes. Salt, sugar and pepper to taste. Then lay out the zucchini and bell peppers cut into cubes in layers, corn and peas on top.

  • Step 3

    Cut the bacon into thin slices and lay it on top of the vegetables. Chop the onion into rings and place on top. Salt, pepper and sugar again, sprinkle with spices and cover with a lid.

  • Step 4

    We put the dishes in the oven, heated to 150 degrees. After half an hour, increase the temperature to 200 degrees and hold for another hour. Serve hot with fresh herbs.

Tips & variations

  • Vegetables can be taken any to your taste. For example, replace zucchini with eggplant, and instead of bacon, take chicken, smoked sausage or turkey.

  • Zucchini must be cut into medium-sized pieces so that during stewing they do not turn into porridge.

  • If using eggplant, it is advisable to soak them in salt water for 10-15 minutes to remove excess bitterness.

  • The order in which vegetables are placed is important. It is better to put harder ingredients (potatoes, pumpkin) on the bottom of the dishes, and place tomatoes, peas and others on top.

  • Some ingredients can be pre-fried in a pan until half cooked. For example, onions, eggplant, tomatoes, bell peppers and carrots.

  • You can pour vegetables with plain water or broth, and to make the sauce thicker and more satisfying, you should add sour cream, mayonnaise, and unsweetened yogurt.
