Potato patties or zrazy – small pies, which are prepared on the basis of mashed potatoes with different fillings. And although their preparation takes a lot of time, the result sometimes exceeds the wildest expectations.

For zrazy, it is advisable to steam the potatoes so that they do not boil and do not turn out watery. Otherwise, a lot of flour will have to be added to the potato dough, which will adversely affect the quality of the zrazy. For the filling, you can take pork, chicken or ground beef. Onions and spices will make it fragrant and juicy.

Step by step method

  • Step 1

    Peel the potatoes, cut into several pieces and boil in water, salt. Make a puree in a convenient way so that there are no lumps left, beat in the egg, mix.

  • Step 2

    Add flour in several steps. Depending on the variety of potatoes, it can take from 100 to 300 g of flour. Stir with a spoon and leave to cool.

  • Step 3

    Finely chop the onion and fry in vegetable oil until golden brown.

  • Step 4

    Put the minced meat in the pan to the onion, salt, pepper, add spices. Stirring constantly, fry until all the moisture that was in the meat has evaporated.

  • Step 5

    Transfer the potato dough to a table sprinkled with flour. Divide into 12 equal parts. Roll each piece into a ball and then flatten. In the center put 2 tbsp. fillings and pinch the edges, as when sculpting dumplings.

  • Step 6

    Then form a pie and roll in flour. Fry in a small amount of sunflower oil on both sides until golden brown.

  • Step 7

    Serve potato zrazy hot. Sour cream is suitable as a sauce, and cook any vegetables for a garnish. Enjoy your meal!

Tips & variations

  • Potatoes for the dough must be well drained so that no excess moisture remains in it.

  • When kneading the dough, be guided by its consistency. It should remain soft, but at the same time almost not stick to your hands.

  • To make the dough easier to work with, let it cool completely.

  • Mashed potatoes for zrazy will taste better if you add a little hot milk and butter.

  • As a filling, you can take any minced meat, vegetables, mushrooms or cheese.

  • Serve potato zrazy with sour cream or sprinkled with herbs.

  • Additionally, you can serve this dish with tomato, green or any other sauce.
