Tips & variations

  • Vegetarian borscht can be cooked on a broth made from dried mushrooms. Soak them in cold water for several hours, then boil them in the resulting infusion. Strain the broth and cook potatoes with cabbage on it, as indicated in the recipe, adding washed chopped mushrooms.

  • Sweet peppers can also be added to lean borscht. Cut it into thin strips, fry together with onions, carrots and beets, and then add to the broth.

  • Herbs, spices and herbs added at the end of cooking will enhance the taste and aroma of vegetarian borscht.

  • Add a little sugar, a little chopped garlic and mustard to the dish. Then the dish will become a real masterpiece.

  • Red beets for borscht can be pre-boiled in a peel or baked in foil, or stewed. It is not recommended to put raw beets in a saucepan with borscht, because. if cooked for more than an hour, almost all of the bright color will go out of it.

  • It is up to the chef to decide whether borscht will be thick or liquid. But a real vegetarian borscht is only thick, rich and with a rich amount of ingredients.
