Step by step method

  • Step 1

    Cut the liver into slices 8-10 mm thick. Cover with cling film and lightly beat off. After that, salt and pepper.

  • For liver chops, it is desirable to use beef liver, since it is more valuable and healthy, but pork can also be used. The liver is chosen fresh, light, from a young animal.

  • For chops, we cut the liver quite thinly, less than a centimeter. To make it easier to cut, the liver can be slightly frozen.

  • To protect our kitchen from splashes during the beating, we use cling film. We put the film under the bottom of the liver, also cover it with a film on top, and then boldly beat off the liver.

  • Such chops can be cooked in batter. To do this, mix eggs, flour and mayonnaise in equal proportions. Then dip a piece of liver in flour, then in batter and send to the pan.
