Step by step method

  • Step 1

We wash a large chicken wing, put it in a saucepan, pour 0.5 liters of water. Add 2 pcs. bay leaf, coarse salt and a few peppercorns. Boil the broth for 30 minutes.

  • Step 2

Take out the wing, let it cool. Strain the broth through a fine sieve lined with cheesecloth. Discard bay leaf and pepper.

  • Step 3

Return the broth to medium heat. As soon as it boils, lay the spirals. Mix well so they don't stick together.

  • Step 4

Cut carrots and bell pepper into small cubes and send to the pan. You can use frozen vegetables as in the recipe.

  • Step 5

We disassemble the cooled wing and put it in a boiling soup. Salt to taste.

  • Step 6

We cut sausages into relatively thin circles, the boiled egg white into small cubes.

  • Step 7

We send the chopped products to the pan.

  • Step 8

Now add dried basil and stir. Cook for another 4-5 minutes, then turn off the heat.

  • Step 9

We wait another 3-5 minutes and pour the soup with sausages and vermicelli on plates. Serve with fresh bread.

Tips & variations

  • For a delicious soup, you need to take only fresh and high-quality products. During heat treatment, good sausages remain juicy, elastic and do not lose their structure. They can be easily cut. Products of low grade during heat treatment lose their structure and taste. They can ruin the whole dish.

  • When buying sausages, pay attention to the production date. Buy only the highest quality products. The composition should not contain any vegetable proteins and fats, only 100% meat.

  • Pay attention to the price: a kilogram of sausages made from natural meat cannot cost less than 1 kilogram of meat.

  • The color of quality sausages is usually pale pink or slightly grayish if offal (liver or heart) is present in the composition. Hot pink sausages have this color due to dyes.

  • Before you add sausages to the soup, it is best to first lightly fry them in a pan. This will improve the taste of the dish and, at the same time, help to ensure the quality of the product. If the pieces remain intact and brown well, you can safely put them in the soup.

  • Sausages will make any first dish tastier. They can be added to rice, buckwheat or bean soup.

A very interesting article, as well as the dish itself. I will definitely try to make it myself and show others. Although I have never made soups, because I love them and they never worked out for me, but I think that this time everything will be fine.
